Proteômica de clara e gema de ovos – revisão de literatura
Resumo
Os ovos de deferentes espécies de aves possuem em sua composição proteínas de alto valor biológico. Muitas das proteínas localizadas neste complexo fluido permanecem ainda não caracterizadas. Novas proteínas podem ser identificadas apresentando características antimicrobianas ou antivirais, proteínas de transporte, ou fatores de crescimento. Esta investigação exige métodos específicos para separação e caracterização. A proteômica vêm sendo utilizada com êxito para a caracterização das proteínas dos ovos. Através de revisão de literatura, objetivou-se realizar o levantamento das técnicas utilizadas para caracterização das proteínas, conhecimento das proteínas e isoformas identificadas em clara e gema de ovos.
