Abstract
nteral formulations are important for the recovery of immunosupressed patients. They are composed by macro and micronutrients, constituting an excellent media for microorganism growth. Such diets’ contamination can occur at different stages of processing. This research aims to verify the microbiological quality of enteral diet in private hospital, the percentage of conformity to the health norms in different areas of diet’s preparation and to isolate the higher risk stage. The methods applied were: microbiological analysis based in RDC Resolution 12\01 and 63\00 for non-industrialized enteral diets and application of a checklist to verify the conformity to Good Preparation Practices. High contamination by total and faecal coliforms and a 61%-index of non-conformities during diet preparation were verified. Also, non-pathogenic microorganisms suggesting inadequate hygiene were found. Faecal coliforms presence can be associated with manipulation or utensils used during processing.
