Os Desafios e as Tendências Para os Negócios Vegetarianos e Veganos na Percepção dos Profissionais do Ramo

Abstract

In recent years there has been a decrease in the consumption of meat and animal products and an increase in the demand for products of plant origin. Thus, the objective of this work was to understand the trends and challenges of the vegetarian/vegan market, from the point of view of branch establishment managers. For this, there were 15 interviews with managers of establishments in the food sector that work only with vegetarian/vegan products, and by those who included these options in their menus. Non-participant direct observation was also carried out by the researcher at a national event on vegetarianism and veganism, in 2019. Content analysis was performed using the Nvivo software. Respondents state that the availability of vegetarian/vegan products is restricted in smaller cities. They understand that there is a movement by large companies to offer vegan product lines, which is criticized by a group of more demanding vegan consumers who prefer products from essentially vegan companies. For the participants, it is necessary for suppliers to invest in reliable, quality raw materials at a fair price and for companies to develop tasty and affordable products.
