Abstract

In this work a study on the rheological behavior of the guava and gabiroba pulp were studied in temperature range from 20 - 35°C. The rheological measurements were made in Brookfield rheometer equipped with coaxial cylinder. The rheograms were adjusted from the experimental data for the models of Ostwald de Waale, Bingham and Herschell-Buckley by Bayesian methodology. For both the pulps the pseudo plastic behavior was found, and pseudo plasticity was bigger at low temperatures. Considering the Ostwald de Waale model, the viscosity and consistency index decreased with the rising of the temperature while index of behavior increased with the rising of the temperature.
